Immune-boosting recipe - Broccoli Lemon Chicken with Cashews

Ingredients
1 tbsp sunflower oil
340g pack of mini chicken breast fillets
2 garlic cloves, sliced
200g pack broccoli
200ml chicken stock
1 heaped tsp cornflour
1 tbsp clear honey
¼ cup lemon juice
A large handful of roasted cashews
Method
Heat the oil in a large frying pan or wok. Add the chicken and fry for 3-4 minutes until golden. Remove from the pan and add the garlic and broccoli. Stir fry for a minute then cover and cook for 2 minutes more, until almost tender.
Mix the stock, cornflour and honey or sugar well, then pour into the pan and stir until thickened. Tip the chicken back into the pan and let it heat through, then add the lemon zest and juice, and cashew nuts. Stir, then serve straight away with rice or noodles.

Broccoli, rich in beta-carotene which is converted into vitamin A in the liver is essential for flushing out toxins in your immune system.
Garlic reduces symptoms associated with vomiting, nausea, dizziness and cold sweats, with it’s anti-inflammatory, anti-viral, antibacterial and antimicrobial properties.
It may be a good idea to also start taking probiotics, or eating probiotic-rich foods. By increasing levels of beneficial bacteria in the gut, it will be easier for your body to prevent infections from spreading. Beneficial bacteria protect the lining in your intestine and increase the ability of nutrients (like the ones in the soup/broth). Probiotic-rich foods include kefir, kimchi, sauerkraut, yoghurt, miso, pickles and sourdough bread.
Honey acts as an antibacterial, antimicrobial agent acting as a shield against various kinds of infections.
